Ingredients

Amounts are for 4 household servings. Sodium model: 1/2 tsp table salt per serving (not added as an ingredient line); estimates are skillet only (optional rice not included).

  • 1 2/3 lb boneless chicken breast, sliced thin
  • 2 2/3 bell peppers (mixed colors), sliced
  • 1 1/3 onion, sliced
  • 1 1/3 tbsp avocado oil
  • 1 1/3 lime
  • chili powder, to taste
  • cumin, to taste
  • salt, to taste
  • black pepper, to taste
  • garlic powder, to taste
  • cooked rice, optional, for serving

Grab first: Pre-sliced fajita pepper/onion mix, thinly sliced chicken breast strips if available, leftover cooked rice if using the optional side

Directions

  1. Toss chicken with chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat avocado oil in a large skillet over medium-high. Cook chicken about 5–6 minutes until nearly done; push aside.
  3. Add peppers and onion; cook 5–7 minutes until softened.
  4. Combine everything. Squeeze lime over all and serve (no tortillas). Optional: plate with cooked rice on the side.
